1 lb Yukon Gold potatoes, cut into 3/4-inch pieces
4 packed cups baby spinach
1 medium yellow onion, diced
2 medium carrots, peeled and diced
2 celery ribs, diced
5 garlic cloves, finely minced and divided
6 cups low-sodium vegetable broth
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp dried thyme
1 1/2 tsp kosher salt, divided, plus more to taste
1/2 tsp black pepper
2 tbsp extra-virgin olive oil
1 bay leaf
1 large lemon
1/4 cup chopped fresh parsley, divided
1 tbsp extra-virgin olive oil
1/2 cup panko breadcrumbs
1/4 tsp garlic powder
INSTRUCTIONS
1. Soften the vegetables:
Heat 2 tbsp olive oil in a large Dutch oven over medium heat. Add the onion, carrots, celery, and 3/4 tsp salt. Cook for 6–8 minutes, stirring occasionally, until softened.
2. Add the aromatics:
Stir in 4 minced garlic cloves, cumin, coriander, thyme, and black pepper. Cook for 30 seconds, stirring constantly, until fragrant.
3. Build the soup:
Add the lentils, potatoes, vegetable broth, bay leaf, and 1/2 tsp salt. Stir well and bring to a gentle boil.
4. Simmer until tender:
Reduce the heat to medium-low and partially cover the pot. Simmer for 28–35 minutes, stirring occasionally, until the lentils are tender and the potatoes pierce easily with a fork.
5. Make the garlic crumbs:
Meanwhile, heat the remaining 1 tbsp olive oil in a small skillet over medium-low heat. Add the panko and cook for 2–3 minutes, stirring frequently, until lightly golden. Add the remaining minced garlic clove, garlic powder, and remaining 1/4 tsp salt. Cook for 30–60 seconds, stirring constantly, until fragrant and crisp.
6. Finish the crumbs:
Remove the skillet from the heat. Stir 1 tbsp parsley into the toasted breadcrumbs and set aside.
7. Add the spinach:
Remove and discard the bay leaf. Stir the spinach into the soup and cook for 1–2 minutes, just until wilted.
8. Add the lemon:
Finely grate 1 tsp lemon zest, then squeeze 3 tbsp fresh lemon juice. Remove the soup from the heat and stir in the lemon zest, lemon juice, and remaining 3 tbsp parsley.
9. Adjust the broth:
Let the soup stand for 3 minutes, then stir. Add a small splash of warm broth or water if you prefer a looser consistency. Taste and adjust the salt or lemon juice as needed.
10. Finish and serve:
Ladle the soup into bowls. Sprinkle the garlic-herb breadcrumbs over each serving immediately before eating so they stay crisp.
