Recipe Yield: 8 servings (24 fruit treats)

INGREDIENTS

2 cups fresh pineapple, cut into 8 thick wedges
1½ cups fresh cantaloupe, cut into 8 slightly smaller wedges
5 medium firm-ripe bananas, divided
8 small seedless clementines
1 small celery stalk, cut into 8 short stems
2 tbsp mini semisweet chocolate chips, divided
4 oz semisweet baking chocolate (55–60% cacao), finely chopped
½ cup heavy cream
½ tsp pure vanilla extract
1 pinch fine sea salt
8 food-safe decorative cocktail picks, long enough to secure all three fruit layers

INSTRUCTIONS

1. Prepare the Candy Corn Fruit:
Cut the pineapple into 8 thick wedges, about 1 inch tall, with wide, flat bases. Next, shape the cantaloupe into 8 slightly smaller wedges, about ¾ inch tall. Slice 1 banana crosswise into 8 pieces, about ½ inch thick. Use the naturally tapered banana ends for two of the tips, then gently shape the remaining pieces into small, rounded tips.

2. Assemble the Candy Corn:
Pat the cut fruit dry with paper towels. Then, stack a cantaloupe wedge over each pineapple base and add a banana tip. Once stacked, gently insert a decorative toothpick through the center of each piece, leaving a small portion visible at the top without pushing through the bottom.

3. Make the Clementine Pumpkins:
Peel the clementines, keeping them whole, and gently remove any loose white strings. Cut the celery into 8 short, thin stems, about ½ inch long. Then, insert one stem into the natural opening at the top of each clementine.

4. Prepare the Chocolate Dip:
First, reserve 1 tbsp of the chopped chocolate for decorating the ghosts. Place the remaining chocolate in a heatproof bowl. Meanwhile, heat the cream in a small saucepan over medium-low heat until steaming and just beginning to simmer. Pour over the chocolate and let stand for 2 minutes. Next, stir gently until smooth, then add the vanilla and sea salt. Set aside to cool slightly.

5. Create the Banana Ghosts:
Peel the remaining 4 bananas and cut each crosswise in half. Then, stand the pieces on their flat, cut ends, gently rounding any squared-off tops with a small knife.

6. Decorate the Ghost Faces:
Melt the reserved chocolate in a small microwave-safe bowl using 10-second bursts, stirring between each until smooth. Once melted, dip a toothpick into the chocolate and carefully draw two little eyes and a smile on each ghost. For variety, add playful smiles, winks, or surprised mouths.

7. Arrange the Halloween Board:
Spoon the chocolate dip into a small serving bowl and place it in the center of a large platter. Finally, arrange the candy corn fruit stacks, banana ghosts, and clementine pumpkins in colorful clusters around the dip. Serve immediately while the fruit is fresh and the chocolate is silky.

Helpful Tips to Perfect This Recipe

  • Choose Fruit That Holds Its Shape: Use firm-ripe bananas, sweet pineapple, and cantaloupe that’s ripe but not overly soft. Pat the pineapple and cantaloupe dry before stacking to help prevent the candy corn pieces from slipping.
  • Keep the Banana Ghosts Fresh: Make the ghosts just before serving to minimize browning. For the neatest smiles, use a toothpick and slightly cooled melted chocolate rather than the cream-based dip, which stays softer.
  • Keep the Chocolate Silky: A good-quality semisweet baking bar with 55–60% cacao gives the dip a rich, balanced chocolate flavor without overwhelming the fruit. If the dip thickens as it cools, gently rewarm it in 10-second microwave bursts, stirring between each, until smooth again.
  • Make Party Prep Easier: Cut the pineapple and cantaloupe up to 1 day ahead and refrigerate separately in airtight containers. The chocolate dip can also be refrigerated overnight and gently reheated before serving. Prepare the clementine pumpkins and banana ghosts closer to serving time for the freshest appearance.
  • Serve Decorative Picks Safely: Choose sturdy, food-safe picks and avoid pushing their pointed ends through the bottom of the fruit. Remove toothpicks and celery stems, and cut fruit into age-appropriate pieces when serving young children.
