These Vegan Snickers Bars are a simple, wholesome twist on the classic candy bar we all love. Date Caramel
- 1 cup Medjool dates, soaked in hot water
- 3 tbsp peanut butter
- 1 tsp vanilla extract
Nougat Layer
- 1.5 cups almond flour
- 1.5 tbsp date caramel
- 4 tbsp peanut butter
Topping
- 1/2 cup roasted peanuts
Chocolate Coating
- 1.5 cups dark chocolate chips
- 2–3 tsp coconut oil
Instructions
1. Prepare the Dates
Remove pits from the dates and soak them in hot (almost boiling) water for 10 minutes. Soft, plump dates blend more easily into a smooth, caramel-like paste.
2. Make the Date Caramel
Drain the soaked dates and place them in a food processor with peanut butter and vanilla extract. Blend for 3–5 minutes, scraping the sides occasionally. The mixture should be smooth and sticky, resembling caramel. Set aside.
3. Create the Nougat Layer
In the food processor, combine almond flour, 1.5 tbsp of the date caramel, and 4 tbsp peanut butter. Blend until crumbly but firm enough to press together in your hands. Adjust with extra peanut butter or caramel if too dry.
Press the nougat mixture firmly into a parchment-lined loaf pan, ensuring it fills the pan evenly with no gaps.
4. Add Caramel & Peanuts
Spread the remaining date caramel over the nougat layer. Sprinkle roasted peanuts on top and gently press them into the caramel so they stick. Freeze for 60–90 minutes to firm up the layers.
5. Prepare the Chocolate Coating
Melt dark chocolate chips with 2–3 tsp coconut oil in a microwave (30-second increments) or over a double boiler. Stir until smooth and glossy.
6. Cut & Dip
Remove the firm block from the loaf pan using the parchment paper. Cut into equal-sized bars. Quickly dip each bar into the melted chocolate, coating evenly, and place on parchment paper. Return to the freezer for 10–15 minutes to set.
7. Enjoy!
Store these bars in an airtight container in the fridge (7–10 days) or freezer (up to 60 days). Let them thaw for 5 minutes before enjoying for the perfect chewy and chocolatey bite.
