Ingredients
- 1 cup almond butter (or peanut butter, but not paleo)
- ½ cup Lakanto maple syrup flavored monkfruit (or pure maple syrup for paleo)
- ½ cup coconut oil
- 5 tablespoons raw cacao powder
- 1 tablespoon vanilla extract
- 2 ½ cups shredded coconut (or gluten-free oats, not paleo or low-carb)
Instructions
- Melt the Base: In a medium saucepan over medium-low heat, combine almond butter, syrup, coconut oil, cacao, and vanilla. Stir continuously until melted and smooth.
- Add Coconut: Remove from heat, then fold in the shredded coconut until well combined and no clumps remain.
- Cool: Let the mixture cool for 20–30 minutes until it thickens, stirring occasionally to speed up the process.
- Form Cookies: Scoop portions of the mixture onto a parchment-lined cookie sheet using a large spoon.
- Set: Refrigerate for 1 hour or freeze for 20 minutes until firm.
- Store: Keep cookies in a sealed container in the refrigerator. They must stay cold or they’ll melt!
