Last week, I spotted 2-pound containers of fresh strawberries at my grocery store for a steal. They were enormous, perfectly red, and begging to be turned into a dessert that would highlight their color and flavor. Enter: Strawberry Cobbler!

Ingredients
For the Strawberry Sauce:
- 3 cups fresh strawberries, hulled and sliced about ¼ inch thick
- ½ cup white sugar
- 2 tablespoons cornstarch
- ¼ cup fresh lemon juice
- 2 tablespoons cold butter, diced
For the Crumble Topping:
- 1 cup all-purpose flour
- 1 tablespoon white sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 3 tablespoons cold butter, cut into cubes
- ½ cup heavy cream
Instructions
- Prepare the Pan and Oven
Preheat your oven to 400°F (200°C) and butter a 9-inch round or square baking dish. - Make the Strawberry Sauce
In a heavy-duty saucepan, combine cornstarch, lemon juice, and sugar. Cook over medium heat until the mixture thickens. Remove from heat and fold in the strawberries gently. Pour the strawberry mixture into the prepared baking dish and dot with the cold butter cubes. - Make the Crumble Topping
In a large bowl, whisk together the flour, sugar, baking powder, and salt. Cut the cold butter into the flour mixture until it forms coarse crumbs. Stir in the heavy cream until just combined. - Assemble and Bake
Sprinkle the crumble topping evenly over the strawberries. Bake for 25 minutes, or until the biscuit topping is golden brown and the filling is bubbly. Let cool slightly before serving.
