Creamy Lemon Pie brings bright citrus flavor, a silky lemon filling, and a buttery graham cracker crust together in one seriously satisfying dessert. Fresh lemon juice keeps every bite lively, while plenty of lemon zest adds a fragrant citrus finish without making the filling overly tart. A little sour cream balances the sweetness and gives the pie an especially smooth, luxurious texture.

The filling bakes gently until just set, then chills into clean, creamy slices that hold beautifully on the plate. Meanwhile, soft vanilla whipped cream keeps everything light and lets the lemon stay front and center. This homemade lemon pie is simple enough for everyday baking but polished enough for celebrations and dinner parties. Even better, most of the work happens before chilling, making it an easy make-ahead dessert with plenty of fresh lemon character.

Recipe Yield: 8 servings

INGREDIENTS

Graham cracker crust:
2 cups finely crushed graham cracker crumbs
3 tbsp granulated sugar
1/4 tsp fine salt
8 tbsp unsalted butter, melted

Lemon filling:
2 (14 oz) cans sweetened condensed milk
5 large egg yolks
3/4 cup fresh lemon juice
2 tbsp finely grated lemon zest
1/2 cup full-fat sour cream
1 tsp pure vanilla extract
1/4 tsp fine salt

Whipped topping:
1 1/2 cups cold heavy whipping cream
1/4 cup powdered sugar
1 tsp pure vanilla extract
Fresh lemon zest, for garnish
Thin lemon slices, for garnish, optional

INSTRUCTIONS

1. Prepare the crust:
Preheat the oven to 350°F. Mix the graham cracker crumbs, sugar, salt, and melted butter until evenly moistened. Press into the bottom and sides of a 9-inch deep-dish pie plate using even, medium pressure without packing too tightly. Bake for 9–10 minutes.

2. Make the lemon filling:
Meanwhile, whisk the egg yolks and lemon zest for about 1 minute. Add the sweetened condensed milk, sour cream, vanilla, and salt, then whisk until completely smooth. Gradually whisk in the fresh lemon juice until evenly combined.

3. Bake the pie:
Pour the filling into the warm crust and smooth the top. Bake for 18–24 minutes, until the edges are set and the center has only a gentle jiggle. The center should reach 160°F without appearing firm or puffed.

4. Cool and chill:
Cool the pie at room temperature for 1 hour. Then refrigerate uncovered until cold, cover, and continue chilling for at least 6 hours or overnight.

5. Make the whipped topping:
Beat the cold heavy cream, powdered sugar, and vanilla until medium-stiff peaks form. Spread or softly swirl the whipped cream over the completely chilled pie.

6. Finish and serve:
Garnish with fresh lemon zest and thin lemon slices, if preferred. Keep chilled until serving, then slice with a clean, sharp knife.

Helpful Tips to Perfect This Recipe

  • Use fresh lemon juice and plenty of zest: Fresh juice gives the pie its clean citrus flavor, while the zest carries aromatic lemon oils that make the filling taste noticeably brighter.
  • Do not compact the crust too firmly: Press until the crumbs hold together, but avoid crushing them tightly into the pie plate. This keeps the crust sturdy enough to slice without becoming hard.
  • Watch the center carefully: The pie should look set around the edges while retaining a small jiggle in the middle. Avoid waiting until the entire filling looks firm, which can make it less silky.
  • Give it the full chilling time: Six hours allows this thicker lemon filling to become completely cold and slice cleanly. Overnight chilling is even better for a make-ahead dessert.
  • For beautifully clean slices: Run a sharp knife under hot water, dry it well, and slice. Wipe and repeat between cuts to keep the creamy filling and crust layers defined.
